Cooking instructions
1.Cook the Quinoa Gourmet lightly seasoned as per package instructions. Let it cool.
2.Dice the zucchini, tomatoes and bell pepper. Coarsely chop the parsley and mint.
3.In a large bowl, mix the quinoa (cool), vegetables, parsley and mint.
4.Add the lemon zest. Season with olive oil, salt and pepper.
5.Leave in the fridge until ready to serve.
