Quinoa Gourmet Lightly Seasoned Tri-Colour Salad

Cooking instructions

1. 

Cook the Quinoa Gourmet lightly seasoned as per package instructions. Let it cool.

2. 

Dice the zucchini, tomatoes and bell pepper. Coarsely chop the parsley and mint.

3. 

In a large bowl, mix the quinoa (cool), vegetables, parsley and mint.

4. 

Add the lemon zest. Season with olive oil, salt and pepper.

5. 

Leave in the fridge until ready to serve.
