Cooking instructions
1.Prepare the Quinoa Gourmet Lightly Seasoned as per package instructions. Preheat the oven to 190°C.
2.Drain and rinse the kidney beans.
3.Mix the Quinoa with the beans and mash them lightly with a fork.
4.Dice the tomatoes. Add the tomatoes, corn and coriander to the quinoa/bean mixture and mix roughly.
5.Put 3 patties on a baking tray lined with baking paper and spread the mixture over them.
6.Sprinkle with cheddar cheese and top with the remaining 3 patties.
7.Bake for 12 minutes. The cheese should be melted, the stuffing hot and the edges of the patties golden brown.
8.Remove the quesadillas from the oven and cut them into triangles.
