Chicken and Broccoli Quinoa Casserole

Cooking instructions

1. 

Preheat oven to 190°C (375°F).

2. 

In a saucepan, cook quinoa according to package directions. Set aside.

3. 

In an ovenproof skillet, heat a little olive oil over medium heat. Brown the chicken cubes on all sides for 4 to 5 minutes.

Add the onion to the pan and continue cooking for 1 to 2 minutes.

5. 

Add quinoa, broccoli, cream, half of the cheddar cheese, poultry seasoning and 250 mL (1 cup) of water. Stir.

6. 

Cover with remaining cheddar cheese. Continue baking for 20 to 25 minutes, until cheese is lightly browned.
