Slice 150g of the Chorizo into rounds. Grind the rest of the sausage in a food processor and set aside.3.
Oil a baking dish, spread the prepared couscous in a single layer on the bottom of the dish. In the next layer repeat the pattern by laying a slice of zucchini, overlapped by a slice of tomato, overlapped by a slice of Chorizo sausage. Continue until the entire layer of couscous is covered. Sprinkle salt and pepper over the layer. Place the sprigs of thyme over top. Sprinkle the grated Gruyère cheese over the layer. Drizzle the olive oil over top.4.
In a bowl mix the breadcrumbs with the ground Chorizo sausage. Stir until well incorporated together. Sprinkle the mixture over top of the cheese layer. Top with knobs of butter. Bake in the oven for approximately 20 minutes.
