Warm Spiced Couscous Salad

Cooking instructions

1. 

Preheat oven to 205 °C (400 °F).

2. 

On a baking sheet lined with parchment paper, spread the sweet potato cubes. Drizzle with olive oil. Salt and pepper. Cook in the oven for 12 to 15 minutes while stirring halfway, until tender. Remove from the oven and let cool.

3. 

In a bowl, whisk all ingredients for the dressing.

4. 

In 4 mason jars, divide into successive layers the dressing, sweet potato, baby spinach, onion, goat cheese, walnuts. Refrigerate.

5. 

At serving time, cook the TIPIAK Spiced Couscous in the microwave according to instructions on the package. Divide the couscous in the jars and shake.
