Veggie burger with Gourmet Quinoa

Cooking instructions

1. 

Cook the Tipiak Gourmet Quinoa as per package instructions.

2. 

Dice the zucchini in small cubes and chop the brocoli.

3. 

In a frying pan, brown the vegetables using a little bit of olive oil until they are cooked. Add salt and pepper to taste.

4. 

In a bowl, combine the vegetables, the parsley as well as the cooked quinoa and mix well.

5. 

Beat eggs and add to the vegetable and quinoa mix. Mix well.

6. 

With your hands, shape medium-sized balls and then flatten to shape into burgers.

7. 

Roll in flour and eggs, then in the breadcrumbs.

8. 

Cook in a frying pan using a little bit of olive oil, about 5 minutes per side.

9. 

Serve with avocado and mesclun salad.

Tips

If you added too many eggs to your quinoa and vegetable mix, feel free to add more breadcrumbs. This will absorb the excess moisture.
