Stuffed zuchinnis

Cooking instructions

1. 

Preheat oven to 190 °C (375 °F).

2. 

Cook the TIPIAK Express Couscous boil-in-bag according to instructions on the package.

3. 

Cut zucchinis in half lengthwise. Using a spoon, empty the top out while leaving an edge of 1 cm (½ po). Place zucchinis on a baking pan lined with parchment paper.

4. 

In a pan, heat olive oil on medium heat. Cook the ground chicken and the onion for 5 to 4 minutes until the chicken is no longer pink.

5. 

Add the pesto and the couscous. Salt and pepper, and stir.

6. 

Stuff zucchinis with the chicken mix and top with goat cheese.

7. 

Bake in the oven for 15 to 20 minutes.
