Cooking instructions
1.In a large saucepan, heat oil over medium heat. Cook onions and garlic for 4 to 5 minutes, stirring occasionally.
2.Add peppers and continue cooking for 2 to 3 minutes.
3.Add curry paste, tomato paste, paprika, coriander and cumin. Continue cooking for 2 to 3 minutes, stirring.
4.Add tomatoes, sweet potato, chicken broth and chicken. Season with salt and pepper. Bring to a boil, then simmer for 15 to 20 minutes on low heat.
5.Add quinoa and continue cooking for 8 minutes, stirring occasionally. Remove from heat.
6.Add coconut milk and stir.
7.Remove from heat and let cool. Pour into sealable containers and place in freezer.
