Wash and dice the bell peppers. Add them to the Mediterranean Couscous.3.
Add the fresh goat cheese. Add salt and pepper to taste.4.
Place a slice of smoked salmon on a sheet of plastic wrap. Place the equivalent of 2 tablespoons of couscous and goat cheese preparation on the salmon. Roll up the salmon using the sheet of plastic wrap to make a cannelloni. Put in the fridge.5.
Serve 2 cannelloni per person drizzled with olive oil and garnished with fresh coriander leaves, crushed pink berries and orange zest.
