Smoked salmon cannelloni with Mediterranean couscous and fresh goat cheese

Cooking instructions


Prepare the Mediterranean Couscous as per package instructions.


Wash and dice the bell peppers. Add them to the Mediterranean Couscous.


Add the fresh goat cheese. Add salt and pepper to taste.


Place a slice of smoked salmon on a sheet of plastic wrap. Place the equivalent of 2 tablespoons of couscous and goat cheese preparation on the salmon. Roll up the salmon using the sheet of plastic wrap to make a cannelloni. Put in the fridge.


Serve 2 cannelloni per person drizzled with olive oil and garnished with fresh coriander leaves, crushed pink berries and orange zest.
