Pearls and Sausage Shakshuka

Cooking instructions

1. 

Preheat the oven to 190 ° C (375 ° F).

In a saucepan of boiling water, place the boil-in-bag of TIPIAK Express Pearls. Cook according to package directions. Fluff the Pearls with a fork. Set aside.

Remove the membrane from the sausages and break the flesh into small pieces.

4. 

In a skillet, heat the oil over medium heat. Cook the potatoes, 10 to 12 minutes, until tender. Set aside in a bowl.

In the same pan, cook the sausage meat, 5 to 7 minutes, until it has lost its pinkish color.

Add the onion and garlic, then cook for 1 minute.

Add the cumin, harissa and paprika. Cook for 30 seconds, until the aromas are released.

Add the marinara sauce, tomatoes and broth. Bring to a boil, then simmer for 12 to 15 minutes. Add the Pearls and the potatoes. Stir.

In four casseroles, divide the mix. Gently crack an egg in the center of each casserole dish. Bake for 8 to 10 minutes, watching from time to time, until the egg whites are cooked but the yolks are still tender.

When ready to serve, garnish with cilantro leaves.
