Mediterranean Couscous Salad with Basil and Chicken

Cooking instructions

1. 

Prepare the Mediterranean Couscous as per package instructions and let cool.

2. 

In a pan, brown the chicken breasts with 2 tablespoons of olive oil.

3. 

Add the chopped basil leaves, salt and pepper and stir well.

4. 

In a salad bowl (or 4 small ones), put together the chicken cubes, the cooled Mediterranean Couscous, the onions and the tomatoes.

5. 

Mix gently and season with the lemon juice and the remaining olive oil.

6. 

Season with salt and pepper and add the coriander leaves. Serve cool.
