Healthy quinoa patties

Cooking instructions

1. 

Cook the TIPIAK Easy Cooking White Quinoa according to the directions on the packaging. Pour the quinoa in a large bowl. Add the olive oil, fluff the quinoa with a fork and set aside.

Reduce the cauliflower to a fine flour in a food processor. Add to the quinoa.

3. 

Add the feta, panko, eggs, garlic, salt, cumin and hot pepper. Add the ground pepper. With the help of a spatula or by hand, mix until you have an even texture.

4. 

Make 8 approximately 8 cm (3 1/8 po) diameter patties, and set aside.

5. 

In a large pan, heat 2 tbsp of olive oil and cook the patties a few minutes on each side, until golden brown.

For tahini sauce, mix the yogurt, tahini, mint and lemon juice. Add the cold water progressively, until the texture is thick but pourable. Add salt and pepper, and stir.

7. 

Drizzle with olive oil  and serve with the quinoa, cauliflower and feta patties.

Tips

The patties can also be cooked in the oven at 200ºC (400ºF) on a parchment paper lined baking tray. Using a brush, coat the patties with olive oil and cook in the oven for 40 minutes, turning the patties halfway through the cooking time.
