Couscous salad with peppers and halloumi

Cooking instructions

1. 

Cook couscous according to package directions. Let cool, then let cool completely in the refrigerator.

Meanwhile, heat a little olive oil over medium heat in a large skillet. Cook peppers and red onion for 4 to 5 minutes, stirring occasionally. Set aside on a plate.

3. 

In the same skillet, cook halloumi slices for 1 to 2 minutes on each side.

4. 

In a salad bowl, mix couscous with peppers, onion, baby spinach and dressing. Season with pepper. Garnish with halloumi slices.
